Cynara cardunculus (cardoon) is a species of perennial herb in the family Asteraceae. It has a self-supporting growth form. It is native to Spain, Morocco, France, Yugoslavia, Portugal, Tunisia, Italy, Turkey, Greece, Cyprus, and Libya. It has simple, broad leaves. Flowers are visited by Leaf-cutter and Resin Bees. It is a photoautotroph. Individuals can grow to 0.8 m.
